A FIFA or EA FC tournament on one console is a queue, so the format question is really a question about how long people sit around. Eight players in double elimination is fourteen matches: on one console at six minute halves that is about three and a half hours, and on two it is under two.
The alternative most groups land on is the one the real tournament uses: a group stage, then a knockout. Run a round robin of four or six first so everybody gets several games, then take the top finishers into a bracket. This tool will do either half, one at a time.

Double elimination for eight or more, so nobody is out after one match. Round robin for four to six players, which gives everyone the most games per hour of console time.
Six minute halves is the usual setting for a tournament, which puts a match at around fifteen minutes including menus and team selection.
Draws are common in football and only round robin can record one. In a knockout, settle a draw with extra time and penalties as normal, and record whoever went through.
Randomise team selection if the group is uneven: shuffling the seeds handles the draw, but not who gets to pick the best club.
One console makes the number of matches the whole schedule. Two roughly halves the evening.

Seeds are paired so the strongest and weakest meet first, which keeps the top seeds in opposite halves of the draw. This is the order the board is drawn in, top to bottom.
Rounds run one after another, because a round cannot start until the one feeding it has finished. Matches inside a round can all run at once, so the number of consoles you have decides the day more than the number of entrants does.
