Youth tournaments are built around a guarantee: every team is promised a set number of games, because families have driven there and the point is for children to play. That rules out a straight knockout and makes group play the standard, usually two groups of four playing a round robin, then a knockout between the top finishers.

How long it takes

Rounds run one after another, because a round cannot start until the one feeding it has finished. Matches inside a round can all run at once, so the number of pitches you have decides the day more than the number of entrants does.
