Mario Kart does not fit a bracket cleanly, and that is worth saying before you draw one. A bracket pairs two entrants; a race holds four. The usual fix is heats: race four players at a time over a four track Grand Prix and send the top two through, which makes a bracket of heats rather than of matches.
The alternative, and the one most living rooms end up at, is a straight points ladder. Everybody races everybody over a series of Grand Prix and the accumulated points settle it. That is closer to a round robin than to a bracket, and for a group of eight or fewer it is simply the better night.
Single elimination works if you race head to head, which is how competitive Mario Kart is actually played. For four player couch racing, run a round robin and rank on Grand Prix points instead, or run heats and record which players advanced.
A four track Grand Prix is about twenty minutes. A single head to head race is nearer five, so a best of three is fifteen.
For heats rather than pairings, record which entrant advanced from each heat, or use the round robin table and keep the Grand Prix points on the sheet yourself.
Mirror mode, item settings and engine class change the length and the fairness of a race far more than the format does. Fix them before round one.
One console is one station, and split screen does not help: the field is fixed at four regardless. Two consoles roughly halve a sixteen player bracket.

Seeds are paired so the strongest and weakest meet first, which keeps the top seeds in opposite halves of the draw. This is the order the board is drawn in, top to bottom.
Rounds run one after another, because a round cannot start until the one feeding it has finished. Matches inside a round can all run at once, so the number of consoles you have decides the day more than the number of entrants does.
