Rocket League tournaments are team events, so the entrant is a three player squad rather than a person, and the draw belongs in the Teams division with the roster after a colon. Eight teams in double elimination is fourteen series, which at a best of five is a long evening and at a best of three is a comfortable one.
What separates this from a couch game is that nothing is limited by hardware. Every match in a round is its own private lobby and they can all run at once, so a round takes as long as its longest series rather than as long as all of them added together. That makes double elimination far cheaper here than for a sport with two courts.
Double elimination at a best of five for anything competitive, which is the Rocket League standard and costs rounds rather than hours when matches run in parallel. Round robin group play for four to six teams, then a bracket for the top finishers.
A five minute game plus overtime and setup is about eight minutes, so a best of five series runs around thirty and a best of three closer to twenty.

Rounds run in parallel because every match is its own lobby. The length of the event is the number of rounds, not the number of matches.

Seeds are paired so the strongest and weakest meet first, which keeps the top seeds in opposite halves of the draw. This is the order the board is drawn in, top to bottom.
Rounds run one after another, because a round cannot start until the one feeding it has finished. Matches inside a round can all run at once, so the number of lobbies you have decides the day more than the number of entrants does.
