Sixteen teams playing everybody once is a hundred and twenty matches over fifteen rounds. That is a league season rather than a tournament: at eight matches a round it is fifteen match days, which is why this shape belongs to a Sunday league and not to a weekend event.
If you were hoping to run sixteen teams in a day, this is the page that says so plainly. Use four groups of four playing a round robin, which is twenty four matches and guarantees everybody three, then take the qualifiers into a knockout. The table below is for the league that runs all season.

Rounds run one after another, because a round cannot start until the one feeding it has finished. Matches inside a round can all run at once, so the number of courts you have decides the day more than the number of entrants does.
